Lemon and Raspberry Cupcakes!

I absolutely love baking, but sadly none of my family are that keen on baked goods. So when an occasion arises that i can bake for, I jump at the opportunity to whip up something yummy (especially when I can get a few people to 'ooh' and 'aah' at my creations :P)

After hours of scrolling through Pinterest, I came across this amazing recipe from Sally's Baking Addiction. You can check out her blog here. I'm sure you'll agree that these look sooo delicious, and they were perfect for the occasion, so I gave them a go!

I planned on baking for a class at college and the recipe says that it makes 12 cupcakes, so I have doubled the recipe in the photos shown. (When I finished the batch I thought it was huge, until I realised that I was using fairy cake cases... my bad!)


I have also given my cupcakes a twist by adding lemon curd to the centre. This is really easy to do once you get the hang of it, but don't be surprised if you get a couple wrong at first - practice makes perfect, after all.

As I was following the recipe I was slightly concerned as the batter seem to get significantly thick after adding the flour, almost at a doughy consistency. However this rectified itself once the milk and lemon juice was added, and became a normal cake batter consistency. Other than this I found the recipe really simple and self explanatory.
